Cuisine: Salmon Baked In Foil

From "Everyday Italian's" Giada De Laurentiis

Prep Time:15 min
Inactive Prep Time:--Cook Time:25 min
Level:
Easy
Serves:
4 servings

Ingredients:
4 (5 ounces each) salmon fillets
2 teaspoons olive oil plus 2 tablespoons
Salt and freshly ground black pepper
3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
2 chopped shallots
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme

Directions:
Preheat the oven to 400 degrees F.
Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend.
Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely; seal the packets closed. Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.

Make this over a campfire on the beach instead!!

Spring Is In the Air!!

I love Spring.  The flowers and trees are in bloom, the air is warmer, and there are flocks of fresh, tiny goslings!!
This little family was caught swimming right next to our boat.

Guest Post: Lauren's Sand Pail Tea Lights

These darling candles were extremely easy to make!

From Michael's, I purchased:
  • Small, clear paint tins
  • Decorative Sand (note: childrens craft sand was less expensive than the equivalent in the home decorating area of the store, and has a slight sparkle, which I thought brings out the iridesence of the shells)
  • Tiny sea shells
  • Tea lights
I filled the tin just under a third full of sand, place the candle in the tin, and surrounded it with tiny shells.  Very simple, affordable, and adorable!  The only difficulty I have found is that the shells and candles tend to move if you handle them at all.  They must be stored upright, somewhere that they won't be disturbed.  Otherwise, you'll find a sandy mess!

Have fun!!

Lauren's Birthday Sail

Lauren asked us if she could invite a few friends sailing for her birthday celebration a couple of years ago.
Here's a few shots of that evening.
It was a beautiful day, but absolutely wind-free!!

They still had some wild and crazy fun!!
Clockwise from Lauren (The Scream :) in red, Emily, Tessa, Taylor, Saori, Meguru, and Christopher.

Her cake of choice...Hostess Cupcakes.

Look at that smooth-as-glass water in the background.  Not a breeze in sight.

They always find ways to entertain themselves though!!

We sat out in the bay, waiting for the wind to pick up, but it never did.
