Cuisine: Cranberry Oatmeal Snack Bars



We make these delicious and healthy bars ahead of time, and then bring them on our weekend trips.  They'll usually last us a few days, unless the teens happen to be extra hungry :)  Store them in an airtight container. 


Preheat the oven to 350 degrees.


Ingredients:
1 cup whole wheat flour
1/4 cup soy flour
1 cup oatmeal
1/2 cup brown sugar
1/2 tsp. baking soda
1 cup applesauce
1 egg
1 tsp. vanilla


After mixing the above well, add:
1/4 cup flax seeds
1 cup dried cranberries


Optional:
1/2 to 1 cup chopped nuts of your choice (we like almonds)


Mix well and press into a greased 9 x 13 pan.  Bake at 350 degrees for 20-25 minutes or until golden brown.  Remove from oven and let cool before cutting into bars.
